One of the most dangerous low fat foods is margarine. Margarine is made from hydrogenated oils. This is performed by heating up the oil to a high temperature and sending hydrogen through it. This began in 1912; so polyunsaturated fats could compete with butter and lard. During hydrogenation, trans fatty acids (TFAs--- These are what clog the arteries and cause heart disease are produced; these artificial unsaturated fatty acids have a different molecular structure to those found in tissues of humans and other mammals. This process creates “trans isomers” of fatty acids, which resemble the chemical configuration of saturated fat. Transfatty acids (TFA’s) can have a “disastrous” effect on your body’s ability to use essential fatty acids.

Margarine is deficient in essential fatty acids. Essential fatty acids are unsaturated molecules that cannot be produced by the body and therefore “must” be included in your diet. Essential fatty acids are needed in your diet for proper growth, maintenance, and functioning of the body. They are needed for normal functioning of the reproductive and endocrine systems and the breaking up of cholesterol deposits on arterial walls.

TFA’s can have a disastrous effect on your body’s ability to use essential fatty acids. Lipoprotein receptors in cells are impaired by TFA’s. This impairment prevents the body from processing cholesterol bearing low-density lipoproteins (LDL Bad Cholesterol); the cells crank up their rate of synthesizing this bad cholesterol, eventually leading to high levels in the blood.

Margarine lowers what is called “good” cholesterol and increases “bad” cholesterol. The More TFA’s you eat the greater chance of Heart Disease.

Essential fatty acids are Omega 3, Omega 6, and Omega 9.

Cholesterol is a waxy lipid found only in animal tissue. It facilitates the absorption and transport of fatty acids. It is needed for the synthesis and Vitamin D, the steroid hormones including cortisol, cortisone, and aldosterone in the adrenal glands, and the sex hormones progesterone, estrogen, and testosterone. Cholesterol is found almost exclusively in foods of animal origin and is continuously synthesized in the body, primarily in the liver and the adrenal cortex.
